Hey did you guys know August is eat dessert first month? It is I swear! Well… who knows who makes this stuff up but I’m willing to run with it.  icon smile Just Peachy! Easy Classic Peach Cobbler

One of my favorite desserts, one I think is amazing all year round is a true comfort classic is – Peach Cobbler. I don’t know what it is about this sweet, melt in your mouth crispy little wonder but I love it! It’s amazing on cold nights served with some hot cider, tea or hot chocolate; and it’s super amazing during summer when you serve it alongside some delicious vanilla ice cream. You can’t go wrong!

Peach cobbler recipes are often really easy to make and are known for being a southern favorite. I lived in Texas for part of my childhood and I can say it never got old when we were down there. Almost every restaurant I visited had their own amazing version. So since I have such love for peach cobbler recipes I decided to share a super simple one I found with you.

Recipe: Easy Classic Peach Cobbler

Ingredients

  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 1 teaspoon grated orange or lemon rind
  • 1 tablespoon lemon juice
  • 4 cups sliced, peeled peaches
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/4 cup butter or margarine
  • 1/4 cup granulated sugar
  • 1 egg, lightly beaten
  • 1/2 cup milk
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 375 degrees F.
  2. Lightly butter an 8-cup baking dish. In a large bowl, combine the brown sugar, cinnamon, grated rind and lemon juice; mix well.
  3. Add peaches and toss to mix; transfer to the baking dish. Combine all-purpose flour, whole wheat flour and baking powder.
  4. In a mixing bowl, cream butter or margarine and granulated sugar until light and fluffy; beat in egg.
  5. Add flour/baking powder mixture alternately with milk. Add vanilla, mixing just until combined. Drop batter by spoonfuls over peach mixture.
  6. Bake for 25 to 35 minutes or until peaches are tender and the top is golden brown. Serve warm.

Cooking time: 35 minute(s)

Number of servings (yield): 8
