Quintessential Potato Latkes for Hanukkah

Old Fashioned Potato Latkes
Yields 15 latkes (potato pancakes)
Ingredients:
2 eggs, beaten
3 cups potatoes, grated, drained
Sour salt (optional) (add a small amount to the potatoes to prevent oxidation)
1/4 cup onion, grated
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoon matzo meal
1/2 cup schmaltz, margarine, or oil
Sour cream
Applesauce
Instructions:
- Combine all ingredients including eggs, potatoes, sour salt, onion, salt, pepper, and matzo meal (except fat) in a bowl and mix well.
- Heat half the fat in a frying pan and drop the potato mixture into it by the tablespoon.
- Fry until browned on both sides, adding fat as needed.
- Keep pancakes hot until all are fried.
- Serve with sour cream and applesauce on the side.
