Quintessential Potato Latkes for Hanukkah

Hanukkah is arriving early this year and you can almost hear the potato latkes (Jewish potato pancakes) hitting the griddle with a sizzle in Jewish homes across the United States. Some Jewish people ascribe to the belief that all food is made better when the cook incorporates schmaltz (Yiddish for chicken fat). Old Fashioned Potato Latkes

Yields 15 latkes (potato pancakes)

Ingredients:

2 eggs, beaten
3 cups potatoes, grated, drained
Sour salt (optional) (add a small amount to the potatoes to prevent oxidation)
1/4 cup onion, grated
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoon matzo meal
1/2 cup schmaltz, margarine, or oil
Sour cream
Applesauce

Instructions:

  1. Combine all ingredients including eggs, potatoes, sour salt, onion, salt, pepper, and matzo meal (except fat) in a bowl and mix well.
  2. Heat half the fat in a frying pan and drop the potato mixture into it by the tablespoon.
  3. Fry until browned on both sides, adding fat as needed.
  4. Keep pancakes hot until all are fried.
  5. Serve with sour cream and applesauce on the side.
